How to Cook Simple, Yummy and Healthy Green Tea Cake

The following procedures teach you how to make simple, delicious yet healthy green tea cakes during the period of working from home caused by COVID-19. Stay home would not be so boring now, just get started to bake yummy cake based on following recipe!

Step1 Mix 25g honey along with 1 spoon of warm water

Step2 Prepare 90g bread flour and sieve the flour

Step3 Add 5g green tea powder (Here I suggest adding regular green tea powder because its cost is commonly lower than matcha powder)

How does matcha compare to green tea?

Both regular brewed green tea and matcha contain caffeine, but less than coffee or black tea. Matcha appears to contain more caffeine that regular brewed green tea. Matcha is loaded with antioxidants and offers numerous health benefits, potentially reducing heart disease risk while aiding weight loss, relaxation, and alertness.

Step4 Sieve the flour and green tea powder to make them uniform

Step5 4 chilled large eggs, separate the egg liquid from the yolk

Step6 Add in 90g caster sugar in 3 batches. Whisk the egg white until stiff peaks form into meringue

Step7 Whisk the yolk in meringue, add bread flour and green tea powder of Step3 and thoroughly whisk/mix them.

Step8 Pour honey (Step1) in the mixture

Step9 Pour mixture into 24cm*14cm*8cm wooden baking frame

Step10 Use a chopstick to make the mixture surface even

Step11 Bake in a preheated oven at 320F(160℃) for 50-60 minutes. Be careful do NOT Pour the mixture too full in the wooden frame to prevent it from inflating too high during heating process.

Step12 Remove from oven and invert the frame immediately and leave to cool

Step13 Remove the cooking paper, enjoy the yummy
